Mizukaze (瑞風) — "fresh wind" — is our chamei: the poetic tea name Japanese tea masters have bestowed on fine matcha for centuries, chosen to capture the spirit of the place it was grown. Ours honors the crisp mountain breezes and river mists that sweep the high-altitude tea fields of Shizuoka, in the shadow of Mt. Fuji. How to brew

Keep your water between 158–176°F — boiling water (212°F) scorches the leaves and turns the tea bitter. Use 2g of matcha — about 1 tsp, one serving — with 2.5–3oz of water total per bowl.

  1. Warm — Rinse your bowl with hot water to warm it, then dry it completely.
  2. Sift — Press 1 tsp of matcha through a small strainer into the warm bowl.
  3. Paste — Pour in 1oz of 160°F water and gently mix into a smooth paste.
  4. Whisk — Add the remaining 2oz of 160°F water and whisk fast in a "W" shape.
